Roll out half of the pastry (recipe follows) - line a 9-inch pie pan and trim edges. Pour blueberry mixture into pie crust.  Roll out remaining pastry to about 1/8 inch thick. Cover pie; trim, turn edge under and crimp. Cut a few vents in top of crust to allow steam to escape. Bake at 425° for 40 minutes, or until crust is nicely browned. &lt;p&gt;  Pie Pastry:&lt;br /&gt;Sift together flour and salt; blend in lemon peel. With a pastry blender, cut in shortening until pieces are the size of small peas. Mix together 4 tablespoons of the water and the lemon juice. Sprinkle 4 tablespoons of lemon water over the dry ingredients; mix lightly, adding just enough additional cold water to hold dough together. Divide dough into 2 portions and shape each portion into a ball. Flatten pastry balls 1 at a time, on lightly floured surface. Blend cream cheese with 3 tablespoons granulated sugar, 1 tablespoon milk, and the vanilla. Set aside a few tablespoons of the pineapple for garnish and stir remaining pineapple into the cream cheese mixture.  Spread pineapple and cream cheese mixture over bottom of the prepared pie shell. Chill thoroughly. In a saucepan, blend the 1/4 cup sugar, salt, and cornstarch. Combine the reserved syrups and measure 1 1/3 cups. Blend into the cornstarch mixture. Cook, stirring, until thickened. Stir in blueberries and lemon juices. Cool. Pour over the chilled cream cheese layer. Chill. Fresh fruits, including blueberries, and            vegetables contain many of these naturally occurring antioxidants such            as Vitamins C and E. &lt;o:p&gt; &lt;/o:p&gt;Blueberries contain 14 mg of Vitamin C and      0.8 mg Vitamin E per 1 cup            of blueberries.  In addition, blueberries contain &lt;span class="SpellE"&gt;anthocyanins&lt;/span&gt;            and &lt;span class="SpellE"&gt;phenolics&lt;/span&gt; that can also act as antioxidants.  &lt;/span&gt;     &lt;span style="font-family: Arial;"&gt;Based on data      from the USDA Human Nutrition Research Center on Aging (Boston,      MA), blueberries are among the      fruits with the highest antioxidant activity.
